
HOW IT STARTED
It started with an idea to make my own Thai curry, because what is a curry besides a deliberate combination of fresh ingredients and dried spices? In the process, I realized that no matter how good my recipe was, it would never be as good as the curries in Thailand, because here in America, we’re forced to cook with canned coconut milk — the carton orange juice equivalent of coconut.
Talking with some friends in food, I landed on a new idea: freeze-drying curry into blocks, eliminating the need for pasteurization, which completely flattens the flavor of food. Uncle’s first product is an instant green curry block, one that might seem ordinary to the eye but tastes more like the curries in Thailand than anything we can make here.

Uncle's Thai Food is inspired by gutsy cooks in Bangkok doing what they please, taking flavors, techniques, and inspiration from all over the world to create new Thai food today.
The company was started by Brendan Chareoncharutkun, an American-born Thai, former cook who splits time between New York City and Bangkok. The name "Uncle's" comes from cooking with my niece and nephews.
